    Description

    The Sous Chef will be responsible for working at both campuses at the University of Manitoba, dependent on business needs. 

     

    The Sous Chef primary objective is to support the Executive Chef with leading the kitchen in their absence to the same standards of execution.

     

    Responsibilities:

    • Determines the production levels for all hot and cold food items and delegates duties to a team of 15 kitchen staff. 
    • Well versed in all types of food and has an eye for detail in plate presentation.
    • Promotes client satisfaction by ensuring all food is executed to standards.
    • Meets food cost target through maintaining inventory and ordering systems Support. Executive Chef in Menu development.
    • Understands conversions in order to prepare menus correctly.
    • Trains all cooks on the proper and consistent execution of all dishes.
    • Maintaining a spotlessly clean kitchen and back of the house.
    • Adhering to all food handling and health & safety procedures and ensuring that all food service standards and quality requirements are met.
    • Conducting Line Checks and Pre-shift meetings prior to service fostering an atmosphere of hard work, discipline, respectful communication, cooperation and positivity amongst all staff.
    • Demonstrating a high level of self-discipline in work habits, work quality, and the pursuit of new professional knowledge & skills.

    Qualifications

    Must have the following qualifications:

    • Strong Leadership and Communication skills.
    • Minimum 3 years of experience with managing in a fast paced and high-volume culinary environment.
    • Experience in menu costing, menu planning, food preparation hiring and scheduling. 
    • Must be comfortable with working in a high volume, seven day a week operation. Might be required to work some evenings and some weekends.
    • Previous experience working in a unionized environment is considered an asset. 
    • Red Seal certified is preferred.  
    • Valid Food Handlers Certification required.
    • ServSafe training is an asset.
    • Health & Safety Certification is an asset.
