Description

Our Leisure group specializes in serving consumers; recreational and entertainment needs in national and state parks, zoos, aquariums, science centers, museums and other day-use cultural attractions. The scope of our operations includes operating lodging, conference and meeting space, houseboats and other marine activities, retail merchandise shops, fine dining restaurants, and interpretive tours in some of this country's most pristine protected lands and national parks.

 

Responsibilities:

 

The Fine Dining Chef will be working closely with the Resort Executive Chef and is responsible for providing leadership in the administration and the management of a consistently high quality food service. 

 

You will be responsible for planning and executing the delivery of food services throughout the location. Your focus will be on quality food production, menu design and food and labour cost management.

  • Menu planning, ordering and inventory
  • Ensure that all food service standards and quality requirements are me
  • Weekly financial reporting
  • Ensure Health & Safety regulations are followed
  • Ensure operation’s level of profitability and client satisfaction
  • Recruitment, training and development of employees

Qualifications

  • 5+ years experience in culinary field or comparable role
  • 3+ years experience with catering
  • Red Seal certified
  • Completion of recognized culinary program
  • Extensive knowledge of food handling and sanitation standards
  • Advanced FST training
  • Strong communication and team building skills, lead and supervise a team of employees
  • Experience with scheduling
  • Proven ability to multi task
  • Understands conversions in order to prepare menus correctly
  • Able to work under pressure/attend to deadlines
  • Ability to stand for long periods of time and weather extreme temperatures (ovens/freezers)
  • Capable of working in environment where noise levels can be high at times
  • Able to lift up to 50lbs and push/pull up to 100lbs
  • Flexible hours including weekends
